Eat It Everyday Kale

Dino, or Lacinato, Kale is my favorite green.  I never had Kale untill I grew it a few years ago, as I grew up eating Collard and Turnip Greens. Now I love the stuff and it is a staple in my family's diet.  Here is a really quick and easy recipe:

one bunch Kale

1/2 bulb Garlic, split into cloves

Olive Oil, enough to sautee

one large Tomato or a few smaller ones

1/2 an Onion

Salt to taste

1 Tablespoon Italian Seasoning

Sautee Garlic cloves with the skin on until golden brown and remove from heat and let the oil cool a bit.  This infuses the oil with garlic and makes everything good! Once you can get your hands in there, take the cloves off and remove the skin and place the garlics aside. Fry the onions in the remaining oil and once tender through in the kale, tomatoes, salt, and italian seasoning. Cook it just long enough that the Kale is cooked through , but not soggy, turning many times. Turn the fire off and throw in the garlic and it's done. With cutting and cooking it only takes about 15-20 minutes. Cook some rice and fry an egg or a little sausage and you have breakfast, lunch or dinner!
