Whisk 6 olive tablespoons oil, 3 tbs. sugar, 3 tbs. rice vinegar and 3 tbs. soy sauce in small bowl. Add salt and pepper to taste. Heat 2 tablespoons olive oil and add 1-3oz.package of Asian noodles from soup mix (after coarsely breaking them) ½ c. slivered almonds, and 2 tbs. sesame seeds. Stir until all are toasted and golden, about 8 minutes. Pour contents into large bowl and cool. Add 10 oz spinach and 1 bunch chopped green onions and toss with enough dressing to coat.
