Aunt Mary's Stir-fried Zucchini

1 ½ lbs zucchini  squash, sliced

2 stalks, green onion, cut in  1” pieces

3 cloves garlic, crushed

½ tsp. salt

½ tsp. sesame oil

1 Tbsp. soy sauce

3 Tbsp. chicken broth

½ tsp. sugar

3 Tbsp. peanut oil

Slice zucchini in ¼” slices. Place salt on top.  Heat peanut oil in wok or fry pan.  When hot, brown garlic in oil and discard.  Add onion and zucchini and stir fry for 2 minutes.  Mix soy sauce, broth and sugar together and pour over zucchini.  Continue to stir fry until tender crisp.  Just before serving mix in sesame oil.
