Beet Yogurt Salad

1 lg beet or 2 mdm beets, cooked & grated

1/3  to 1/2 cup plain yogurt

1 tsp salt (to taste)

1 tsp sugar (to taste-optional)

¼ cup crushed peanuts (dry roasted are great)

¼ cup chopped cilantro

 Mix all together and eat.  It turns a beautiful magenta color with green cilantro flakes.
