Chicken and Leeks Stir-Fry

1/4 cup chicken stock or broth
1 tbsp fish sauce

1/2 tsp tapioca starch (cornstarch will work)
2 tbsp coconut oil
1.5 lb chicken, cubed OR cut into 1/2 in strips
3-4 medium sized leeks, diced
1-2 jalapenos, diced
1 green pepper, sliced
Minced fresh ginger, to taste
3 zucchini, julienned (for "noodles") OR Rice
Salt and pepper

Julienne zucchini, rinse and drain in colander. Set aside.

In large skillet, heat coconut oil. Add chicken. Salt and pepper. Saute over high heat until white but not cooked through. Add leeks, pepper, jalapeno, and ginger. Saute for a few minutes. Combine stock, fish sauce, and starch together in a bowl. Whisk to combine. Add to the skillet, stir to combine and cook until thickened (a few minutes). 

Serve over the zucchini "noodles" or rice and enjoy. 

Serves 2-4 people depending on portion sizes.
