Chunky Gazpacho

1.5 cups seeded, peeled, chopped cucumbers

1 cup onion, chopped

1 cup sweet pepper, chopped

2 pounds seeded, peeled, chopped tomatoes

4 cloves garlic, minced

2 TBSP olive oil

2 tsp balsamic vinegar

½ tsp cumin

1 tsp salt

½ tsp pepper

1 cup tomato juice  

 

 

Bring pot of water to boil. Cut an X into bottom on tomatoes. Boil tomatoes for 15 seconds, then transfer to ice bath. After 1 minute, peel the tomatoes. Combine all ingredients and allow to chill up to 4 hours. Reseason as necessary. Blend ingredients in a food processor if smooth gazpacho is desired.
