Coconut-Curry Zucchini

COCONUT-CURRY  ZUCCHINI  (a family fav!)

2 C cubed Zucchini (skins on is fine)

½ C minced Onion

Several garlic cloves, crushed

3 T Butter

1/3 C raisins

2 T flour

1 C water

1 cube ckn bouillon, crushed

1 t Curry (or to taste)


¼ C shredded Coconut

 Saute zucchini, onion and garlic in butter until almost tender. Turn stove off and add raisins. Whisk water, bouillon and flour in a small bowl and add to pan. Add curry and salt. Add coconut or use as garnish. Serves 6. (adapted from  Colorado cookbook pg.67)
