Grilled Chipotle Lime Cauliflower Steaks

1 large heads cauliflower

2 Tbsp olive oil

1 lime, zested and juice

1 clove garlic, finely grated

1/2 teaspoon honey

1 tablespoons paprika

1/2 tablespoon chipotle powder

1/2 teaspoon salt

1/4 cup finely chopped cilantro leaves

Lime wedges, to serve

 

Remove the leaves on each cauliflower head, then cut the cauliflower into 3 to 4 thick "steaks." Whisk together the olive oil, lime juice, garlic, and honey. In a separate bowl, mix the lime zest, paprika, chipotle, and salt. Heat grill to high. Brush both sides of the steaks with the olive oil mixture and sprinkle generously with the chipotle powder mixture. Cover the grill and cook for 5-6 minutes. Flip, then cook covered for another 5 minutes. Sprinkle with chopped cilantro and serve immediately with lime wedges.
