"Karen's Salad" -Our version of a Greek Salad

1 large head (or 2 small heads) of Romaine Lettuce, torn into bite size pieces

½ head (or bunch) of salad greens

2 tomatoes, chopped or wedged

1 medium sized cucumber, chopped or sliced

2 tablespoons (or more, to taste) red onion, finely diced or sliced

½ cup sweet peppers; red, yellow, green, diced

Dressing:

1/3 cup extra virgin olive oil

¼ cup red wine vinegar

2 tablespoons fresh parsley, chopped

2 tablespoons fresh oregano, chopped (dried also works, use 2 teaspoons)

¼ small clove of garlic, very finely minced

Salt and Pepper, to taste

Arrange all vegetables in a large platter or bowl. Mix dressing together with whisk, or in a small jar. Refrigerate for at least 10 minutes to let flavors meld together. Pour over your salad.

Top your salad with:

¼ cup Kalamata Olives, whole or pitted (your choice)

¾ cup feta cheese, crumbled

½ cup dried cranberries

¾ cup pecans, chopped
