**Recipe of the Week 3** Spinach Meat Loaf
1 ½ lbs. ground round
½ cup regular oats, uncooked
½ cup wheat germ
2 large eggs, lightly beaten
½ cup shredded carrot
¼ cup chopped onion
1- 10oz. pkg. frozen chopped spinach, thawed & well drained
½ cup milk
1 tsp. salt
½ tsp. pepper
½ cup steak sauce (helps to keep the meat loaf moist)
Combine first 10 ingredients, stirring well; shape into a 9x5x3 inch loaf pan and place on a lightly greased rack in a broiler pan.
Bake at 350* for 40 minutes. THEN spread steak sauce over meat loaf, bake an additional 20 minutes. Yield 6-8 servings.
