Winter/Spring CSA Week 7

While we have been flirting with spring for several weeks, the weatherman says we probably aren't finished with winter. But that doesn't stop your farmers from prepping when the weather cooperates.




Summer CSA registration continues. We just added two new pickup locations in Zelie and Mars, so if you have friends who live there, please share the news. If you haven't signed up for Summer/Fall CSA, here's the link.

Butternut Squash and Black Bean Enchilada Skillet



Spinach Egg Drop Soup

The soup recipe calls for chicken bouillon, but I never use it. Even chicken broth powders that are often viewed as healthy have unwanted additives in them. So when I don't have homemade chicken broth on hand, I use this Easy Broth Powder. Just 1 teaspoon per cup of water, and you have a flavorful broth to use in recipes. I mix up a big batch and keep it in a jar in my spice cupboard. It's much less expensive than broth that comes in a carton or can, too.



Autumn posted a pic of arugula steak salad that she made last week. Looks delicious and super easy. Cook your steak and slice thinly. Place on a bed of arugula (or any fresh green), add a vinaigrette and a sprinkling of freshly grated Parmesan. Dress it up with your favorite salad additions.
